Dr Z's Tasty Black Beans a la Guilliame
First in a series of zzzone veggie recipes


1 lb dry black beans
8-10 cups water
Salt
Pepper
Ground cumin
Sugar
3 medium to large green bell peppers
1 medium to large onion (purple, yellow, or white)
Olive oil
3-5 cloves of garlic
1 hot pepper such as
cayenne
Dry oregano


Wash and cut bell peppers into pieces after removing stem and seeds inside
Peel onion and cut into medium pieces
Peel and crush garlic cloves
Saute garlic for a few minutes in 2-3 tbsp or more of olive oil
Add bell pepper and onion
Saute garlic, onion, bell pepper until soft but not mush
Add 1/4 to 1 hot pepper if desired to the sautee

Rinse dry black beans and remove any rocks
Put black beans in a large pot and add about 9 cups of water
Bring black beans and water to a boil
Add sauteed garlic/onion/bell pepper/olive oil and stir

Add black pepper to taste
Add 2-3 tbsp ground cumin or to taste
Add 1-2 tsp white or brown sugar
Add 1 tsp dry oregano

Salt to taste (usually 2-3 tbsp) gradually

Cover pot and simmer just at boiling for 3-4 hours until soft, fragrant, and yummy.

Stir occasionally and add fluid when needed.

tsp=teaspoon=5 cc
1 cup=240 cc
